Eduardo’s famous Protein Balls are a wholesome and delicious snack to boost your energy throughout the day.
They’re small and energy dense, easy to take with you anywhere! They also taste great and are packed with nutrients, such as plant-based protein, fibre, complex carbs and a range of vitamins and minerals. These protein balls will certainly keep your taste buds happy with nature’s sweetness.
Our recommendation is to make a big batch as freezing is always an option. This is an easy and great ready-to-go healthy snack.
Without further ado, let’s get to the recipe!
Ingredients:
6-8 pcs Dates
1⁄2 cup Slivered Almonds
1⁄2 cup Shredded Coconuts
1 tbsp Chia Seeds
1 tsp Vanilla Extract
Method
Step 1: Soak Dates into warm water for 5 min
Step 2: Add all ingredients above into a food processor
Step 3: Roll the mixture into ideal ball shaped snack
Step 4: Enjoy! Optional to refrigerate for up to 2 weeks or freezing for up to 2 months.
* Option to roll Protein Ball in shredded coconut as a coating.

Can you tell Me what you use to cover the outside of the Cookie Monster Energy bites?
I just left Aruba where I spent 7 days. Discovered these on my 4th day. Bought 6 – each a different one. They were all gone the next day! Went back the day I was leaving and got a smoothie and one Cookie Monster to take with me. I ate if before I even got to the airport and regretted not thinking to freeze them and take more with me. You could have a booming business shipping these to U.S.!!!
So glad to see this recipe. At least it’s a start for me to get some more of these awesome jewels in my hands. They are the best I’ve ever had and the variety is incredible!
